I have been trying my best to make most things from scratch because it is budget friendly and this muffin recipe has become my favorite. I adapted it from Chocolate Covered Katie’s Blog and her Blueberry muffin recipe here. This recipe is especially great because it doesn’t require raw egg or a mixer – so these come together quickly with few ingredients! I also use whatever fruit I have on hand – blueberries, blackberries etc…
I especially love them because you can whip them up on any type of morning. A busy school morning, lazy weekend morning or for a simple dessert! When the mood strikes, I will even indulge by adding chocolate chips…
While I love the “eggs included” version of muffins and such, these are a great alternative – especially for those with dietary restrictions. This mix is even perfect for whipping up as donuts or a variety of baked goodies… Basically I am saying they are a must!
