How To Make Gluten-Free Candy Cane Cookies!
I have long wanted to find a way to make candy cane cookies gluten free… And today I am happy to report that I have found a way! These are delightfully simple to pull together and look darling! I am joining my sweet friend Kristen from Ella & Claire Co. as we share some delicious Christmas cookie recipes…
Here are the ingredients you will need to make this fun cookies:
- 1 and 1/3 cups of almond flour
- 1/4 cup arrowroot powder
- 1 flax egg (using 1 tbsp. flax seed with 3 tbs. water)
- 1/2 tsp salt
- 1 tbsp oil (I used almond oil)
- 1/4 cup of coconut sugar (you can always add more to make these sweeter)
- Coconut flour or arrowroot powder for dusting dough
- Red food coloring
And here is how you put these together:
Set the oven to 350 degrees and start by mixing all the dry and wet ingredients together in one bowl. You will need to really knead/mix the dough and you can always add a little bit of nut milk if it is feeling dry.
Next divide the dough in half. Set one half aside while mixing red drops of food coloring into the other half of dough. Mix it all up really good until you have a vibrant candy cane color.
Then divide the half doughs into fourths. Take each little fourth of dough and roll it into a roll shape. Take a roll of red dough and then a roll of plain dough. You will carefully wrap them around each other and make your candy can shape. Place them on parchment paper and bake for 15 minutes or until they are firm enough to hold their shape.
Take them out to cool and enjoy! I love a good Christmas cookie and these gluten-free candy cane cookies are just that!
