Lemon Pasta
This quick and inexpensive lemon pasta is an easy way to impress your family!
This is a quick and VERY inexpensive lemon pasta! It is another staple for our family menu planning and the kids love it. If you don’t eat pasta you could always make this with delicious spaghetti squash and it would be splendid! We will sometimes add chicken for protein or use cheese ravioli when we want to change it up a bit! I hope you try it out and thanks for stopping by!
Ingredients
– 1 pound of pasta (any shape will really work)
– 2 tablespoons of olive oil
– 2 tablespoons of butter (or you can omit and use an additional 2 tablespoons of olive oil)
– 3 garlic cloves
– 1 large lemon
– grated Parmesan (for sprinkling on top at the end)
– 1 tablespoon of chopped Italian parsley
– salt/pepper
Directions
-Start boiling a large pot of salted water. Meanwhile, start warming the butter/oil on low heat and finely chop the garlic. Once the oil/butter is warm add the garlic and sauté on low heat for about 5 minutes. While the garlic sautés, grate the entire lemon peel (using a fine grate) and juice the entire lemon into a small bowl. Add the lemon peel/juice to the simmering mixture on the stove. Turn the heat to medium low and allow to simmer. Add your pasta to the boiling water (cook time depends on the variety of pasta). When the pasta has finished cooking, drain the water and pour the lemon sauce onto the pasta. Toss the sauce/pasta and add salt/pepper to taste. Plate and garnish with parmesan (to taste). Sprinkle the parsley on top! We often have a side of squash or broccoli when eating this dish.
*note – if the dish seems too dry for your liking you can always add additional oil and toss it together at the end. So easy!
