How to Make Gluten/Dairy Free Spritz Christmas Cookies!

Today I am part of a fun Christmas Cookie exchange with Kristen at Ella Claire! One of my favorite things to do this time of year is bake with my kiddos. Of course that got tricker when we went diary and gluten free so finding fun recipes has been a must. Which is why I am so excited about today’s recipe! These gluten/dairy free spritz Christmas cookies are maybe my best cookie recipe yet. They are crunchy, perfectly sweet and remind me of a shortbread cookie…

Gluten and Dairy Free Spritz Christmas Cookies!

They are made with simple ingredients and in my humble opinion, I think that even your non gluten and dairy free friends or family will enjoy these too!

Here is what you will need to make these:

  • 1/2 cup coconut flour
  • 1/ 1/4c almond flour
  • 1/2 tsp. baking soda
  • 1/2 + 1/4 cup shortening (I use palm shortening)
  • 1 flax egg (which is 1 tbsp. flax seed and 3 tbsp. water)
  • 1 tbsp. nut milk (we used cashew)
  • 1 tsp. vanilla
  • 1/2 cup coconut sugar
  • 1 tbsp. maple syrup
  • 1 tsp. salt
  • 1 tbsp. water
  • Cookie press with shapes
  • Silicone baking sheet
  • Cookie baking sheet

Here is how you will bake these sweet cookies up!

  • Set the oven to 350 degrees.
  • In a bowl combine the flours, flax seed and salt. Set this aside.
  • Using a mixer, cream the palm shortening and coconut sugar together.
  • Next mix in the vanilla, water and maple syrup.
  • Now slowly blend in the remainder of the dry ingredients from the bowl you set aside.
  • Take the dough and using your cookie press’ directions add the dough to the tube and begin pressing! Lay out the cookies on your silicone baking sheet/pan.
  • Please note, the consistency of this dough is a bit different than the traditional. We had to practice a few times and make sure to clear the discs between presses at times. Once we got the hang of it, it was easy going!
  • Once you have your sheet filled up set them in the oven to bake!
  • Let them bake for about 10-12 minutes. Watch them till they start to turn golden brown, but be careful as they can turn too quickly!
