Try making these delicious gluten/dairy free Easter egg lemon sugar cookies that don’t disappoint!

Hello there friends! Are you ready for some more Spring time fun?! Today I’m showing you how to make these sweet delicious gluten/dairy free Easter Egg Lemon Sugar Cookies… I’ve joined my friend Krista at The Happy Housie again for the Seasonal Simplicity Spring Series.

I have actually shared this recipe before at Christmas time, but I took it a step further by icing the cookies differently and adding a splash of vibrant lemon flavor!

You can find the entire recipe here. Please note that this time around, I added the zest of a lemon and the juice of half a lemon to the batter.

Take your chilled dough and flour the surface.

Roll it out to your liking of thickness and begin cookie cutting. I used egg shapes this time around!

Bake the lemon sugar cookies according to directions and then let them cool completely before icing.

Here is how I decorated these whimsical delightful cookies…

I started by running a border with cookie icing. I used this brand, but you could easily make your own. Then I filled in the border with this brand icing as well (The picture on the container was my inspiration for the cookie designs I used here). Please note, the icing I used did have some egg in it. And as I said before, you could substitute with any cookie icing you prefer.

Next I mixed a separate batch of icing with pretty pastel gel food coloring. The colors were soft and perfect for spring. I used a metal skewer to add a small dollop onto the already iced cookie.

Then I took my wiped clean skewers again and dragged in down through the dollops. This creates a heart or floral shape almost.

I have always wanted to make designs like this as they remind me of the fancy foamed coffee you can get. The designs I have seen are truly remarkable. Isn’t it amazing that something as basic as coffee can be so beautiful!

And here you can see all the cookies spread out. I played with all kinds of designs, some I liked more than others ;)… But nonetheless, it was a joy to get artsy with some baked goods.

They almost felt too pretty to eat. but that didn’t stop any of us, lol.

I also got the cute idea that you could fill one of the porcelain egg containers and place it in a food safe plastic bag. Finish it off with a darling bow and gift tags.

This would make a sweet hostess gift, teacher appreciation or any kind gesture for a friend/family.
