How To Make Gluten/Dairy/Egg Free Carrot Cake Muffins!

Hi there friends, how have you all been? I have missed being on here more often, but am still adjusting to this different normal right now. I have some fun things to catch you up on soon! Today though, I am sharing with Janine from The Happy Happy Nester, Ashley from Modern Glam and Leslie from My 100 Year Old Home to give you all some fun recipe ideas for Mother’s Day Brunch. My recipe is a gluten/dairy/egg free one for all my food sensitive friends out there! I will say that it feels a little different to not be able to grab fresh flowers and make this post extra pretty, but this will have to do for now!

Gluten-Dairy Free Carrot Cake Muffins

Here is what you will need to make about 10 muffins:

  • 1 cup almond flour
  • 2/3 cup coconut flour
  • 2 tbsp. arrowroot powder
  • 2/3 cup coconut sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. ground ginger
  • 1 tsp. baking soda
  • 2 tbsp. flax
  • 1 tsp. vanilla
  • 1 tsp. vinegar
  • 1 tbsp. almond oil (or baking oil of your choice)
  • 1 3/4 cup water
  • 1/4 cup carrot shreds
  • 1/4 cup coconut shreds
  • 1/4 cup chopped walnuts

Here is how you will put these muffins together…

  • Set the oven to 350 degrees and line your muffin pan.
  • Mix all the dry ingredients together and then mix the wet separately.
  • Now mix all the ingredients together (try not to over mix). Fill the muffin liners about 3/4 of the way up! Set in the oven for about 30 minutes. You will want to check on these, but the longer they can cook the better.
Gluten-Dairy Free Carrot Cake Muffins

A little note about gluten/dairy/egg free cooking… Things do not puff up as they would with normal baking ingredients. And let things rest for a while and set before enjoying. These goodies will be more moist than a typical muffin, but still so delicious!
